Air Fried Asian Salmon Bowl

I’m hooked on Buddha or grain bowls. I find them so satisfying physically and emotionally. You can’t go wrong with a balanced meal that’s loaded with toppings and flavor. You can make this your own with your favorite add ins. You could also do a different type of fish (perhaps local!) or chicken. I’m a big salmon fan. I typically buy the Publix Greenwise frozen wild sockeye salmon. Salmon is high in omega -3 fatty acids which are great for heart and brain health. Aim for consuming fish twice per week!

This recipe makes one bowl. Scale up as needed.

Ingredients

4 oz salmon (fresh or frozen, defrosted)

Salmon Marinade

2 Tbsp soy sauce

1 Tbsp sesame oil

1 Tbsp rice vinegar

1 Tbsp honey

3 cloves garlic, minced

black pepper

Bowl Toppings

1/2 cup of white or brown jasmine rice seasoned with rice vinegar

1/4 cup diced tomatoes

1/4 cup edamame

1/4 cup diced cucumber

1/4 cup shredded carrots

1 cup roasted cauliflower or broccoli (totally optional but fun)

1/4 sliced avocado

Cilantro springs, diced or not

1 tsp black and white sesame seeds

Spicy Mayo

1 Tbsp Mayonnaise

2 Tbsp Sriracha

Directions

  1. Defrost salmon if needed and cut into 1 x 1 inch cubes.

  2. Prepare rice per package. Replace a few tablespoons of the water with rice vinegar. I prefer to use a rice cooker for rice to it comes out great every time!

  3. Add marinade items (soy sauce, sesame oil honey, rice vinegar, garlic, pepper) to a medium bowl and stir well. Add salmon cubes and let marinate for 20-30 minutes.

  4. Meanwhile, chop up ingredients and preheat the air fryer. Stir together mayo and sriracha to make sriracha mayo.

  5. Once salmon is marinated and air fryer is preheated, add salmon cubes to the air fryer at 400F for 6-7 minutes.

  6. Assemble bowl with rice then layer toppings as desired, drizzle sriracha mayo and sprinkle sesame seeds.
