Avocado toast with hard boiled egg, goat cheese, and chili garlic crunch

I decided to recreate an avocado toast I had while on vacation earlier this year in Telluride, Colorado! If you have the chance to visit, Telluride or Ouray, it is absolutely beautiful and one of the most scenic places I have ever been. In fact, Ouray’s nickname is the “Switzerland of America.”

This avocado toast is not like one you have ever had! It has literal layers of flavors. The addition of the hard boiled egg adds protein to complement the healthy fat in the avocado for a very satisfying meal or snack. It is topped with a chili garlic crunch that’s very popular in Telluride. I was able to find a similar options from Trader Joes.

Ingredients

2 slices of whole wheat bread (I used Dave’s Killer bread 1 oz. slices)

1 avocado, sliced

1 hard boiled egg, sliced (I use an egg slicer for this)

1 Tbsp. spreadable goat cheese

1 Tbsp. garlic chili crunch topping

Lemon

Directions:

1. Toast the bread.

2. Spread the goat cheese on to the bread.

3. Layer the sliced hard boiled egg.

4. Layer the sliced avocado.

5. Drizzle the chili garlic crunch topping.

6. Squeeze fresh lemon juice.
