This is a delicious make ahead, dessert, snack or even breakfast option. You could add protein powder or Greek yogurt to up the protein content if you’re making this a meal.

make ahead chocolate chia seed pudding with variations

Serves 1

Ingredients

1 glass mason jar or similar container

2 Tablespoons chia seeds

1/2 cup milk of choice (I used cashew milk here)

1 Tablespoon cocoa powder

1 teaspoon maple syrup

1 teaspoon vanilla extract

pinch of salt

Toppings (optional)

1 Tablespoon chopped pecans

1/2 banana, sliced

Other ideas with cocoa powder

peanut butter + sliced banana

cocoa powder + raspberry

avocado (trust me!)

Sans cocoa powder

raspberries + blueberries

peanut butter + jelly

1/4 cup pumpkin puree + pumpkin pie spice

Directions

  1. Add milk to jar then add the rest of the dry ingredients except for the chia seeds.

  2. Add chia seeds and stir well until combined.

  3. Add additional toppings as desired. I added chopped pecans and sliced banana here.

  4. Place in the refrigerator overnight. Pudding should be thickened and ready to eat by the morning.
